Simple Bulgur Pilaf View Larger Image Yield: 4 cups Servings:8 Ingredients: 1 cup bulgar (dry) 2 cups vegetable broth, Organic, Low Sodium 1/2 cup celery, chopped 1/2 cup carrot, chopped 1/2 cup onion, chopped 1/2 cup zucchini squash, chopped 1 teaspoon Garlic, crushed 2 teaspoon extra virgin olive oil Salt and pepper, to taste Directions: In a Sauce Pan, bring bulgur and Vegetable Stock to a boil, then reduce heat and simmer, covered, for 20 minutes(or if quick cooking bulgur-by package instructions). Set Aside. In a separate saute pan, heat olive oil to medium heat, add vegetables and garlic and saute until vegetables are translucent. Add Vegetables to cooked Bulgur and toss.
