Baked Bulgur Breakfast Cereal

Yield: 4 cups Servings: 8

Ingredients:

  • 1 cup Bulgur
  • 1/2 cup Chopped Walnuts
  • 1 teaspoon Baking Powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon sea salt
  • 2 cups Almond Milk-Unsweetened
  • 2 each egg whites
  • 1 ounce Earth Balance-Organic, Whipped, Non GMO
  • 1/4 cup Unsweetened applesauce
  • 2 teaspoons Vanilla Extract
  • 1/2 cup raspberries, frozen
  • 1/2 cup strawberries, frozen
  • 1/2 cup blueberries, frozen
  • 1/2 cup blackberries, frozen
  • Coconut Oil Spray
  • 8 ounces Almond Milk-Unsweetened
  • 4 cups Fresh Blueberries

Directions:

  1. Preheat Oven to 375 degrees. Prepare 8×8 baking dish by spraying the inside with a thin layer of Coconut Oil Spray.
  2. In a bowl, mixed together the bulgur, Half the walnuts, baking powder, cinnamon and salt. In another bowl whisk together the Almond Milk, Egg, Earth Balance, Apple Sauce, and vanilla.
  3. Sprinkle 2/3 cup of the berries on the bottom of the baking dish, pour dry ingredients over the berries, followed by the Almond Milk Mixture, Scatter the remaining berries and Chopped Walnuts on top.
  4. Bake for 35-45 Minutes until top is golden brown and cereal has set. Remove from oven and let cool for 5 minutes, Serve with Fresh Berries and Almond Milk(2T).
