Simple Bulgur Pilaf


Yield: 4 cups Servings:8


  • 1 cup bulgar (dry)
  • 2 cups vegetable broth, Organic, Low Sodium
  • 1/2 cup celery, chopped
  • 1/2 cup carrot, chopped
  • 1/2 cup onion, chopped
  • 1/2 cup zucchini squash, chopped
  • 1 teaspoon Garlic, crushed
  • 2 teaspoon extra virgin olive oil
  • Salt and pepper, to taste


  1. In a Sauce Pan, bring bulgur and Vegetable Stock to a boil, then reduce heat and simmer, covered, for 20 minutes(or if quick cooking bulgur-by package instructions). Set Aside.
  2. In a separate saute pan, heat olive oil to medium heat, add vegetables and garlic and saute until vegetables are translucent.
  3. Add Vegetables to cooked Bulgur and toss. Season with Salt and Pepper. Great served as a side dish or added to a Salad for extra texture and fullness.
